Ingredients
- 300 gr. of White chocolate.
- 2 dl. of Fresh craem.
- 0,5 dl. of Rum.
- 1/2 Vanilla bean.
- For the sesame hardbake:
- 250 gr. of sugar
- 50 gr. of White sesame seeds
- 50 gr. of Black sesame seeds
- 100 gr. of Pistachio (chopped)
- a bit of oil
- For the caramelized oranges:
- 2 Oranges
- 100 gr. of sugar
- 0,2 dl. of Gran Marnier (or similar)
Method
- In a small pan, prepare the caramel by combining 250 g of sugar, a little water, and a teaspoon of lemon juice (do not stir).
- As soon as the caramel begins to turn light brown, add the sesame seeds and pistachios, then turn off the heat. Stir well to combine.
- Spread the hot caramel onto a lightly greased board (greased with oil). Allow it to cool slightly, then cut it into strips while still warm.
- Next, peel the oranges and slice them, taking care to remove the thin, white skin.
- In a small pan, combine the orange slices, 100 g of sugar, and Gran Marnier, and caramelize for a few minutes until the sauce turns light brown.
- In another pan, warm the fresh cream with the seeds from a vanilla bean. Add the chocolate and stir until it is completely melted, then incorporate the rum.
- To serve, layer the chocolate mousse at the bottom of a glass, top with the caramelized oranges, and garnish with the sesame brittle.
